Baking: Cakes, Breads and Pastries (Part 2)

This 10-week course follows on from the Introduction to Baking courses in Term 1 and is suitable for both beginners and more experienced bakers. The course provides a lot of creative freedom to participants, who will work on a portfolio showcasing their individual ideas. You will analyse and study ingredients in detail, learn new skills and techniques and experiment with different flavours.

Participants will be able to share ideas and recipes from different cultures as we discuss different regional approaches to baking.

    You should have a good level of spoken and written English

  • Course Content


    Each week you will create a different bake, developing your skills through a range of techniques:

    • Muffins (+ compote)

    • Cookies and cinnamon biscuits

    • Bread (focaccia)

    • Devil's food cake

    • Cake Decorating - chocolate ganache and nuts

    • Victoria Sponge

    • Puff pastry \– palmiers and cheese straws

    • 3-layered cake \– raspberries & cream

    • Choux pastry

    • Loaf week - banana bread (V)
  • Progression Next Steps


    Participants will be able to move on to further study or use their new knowledge both at home and in the workplace.

  • Additional Information


    Participants will need to bring their own ingredients and a suitable container to take bakes home. The course tutor will inform students before each session about what is needed.
